Ingredients
    For the Jackfruit Filling:
  • 2 cans young jackfruit (drained and rinsed)

  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 0.5 tsp chili powder
  • 0.25 tsp ground cinnamon
  • 0.5 cup vegetable broth
  • 2 tbsp soy sauce
  • 1 tbsp maple syrup
  • Salt and pepper to taste
  • For the Mango Slaw:
  • 1 cup red cabbage (shredded)
  • 1 cup green cabbage (shredded)
  • 1 ripe mango (julienned or diced)
  • 0.25 cup fresh cilantro (chopped)
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • Salt to taste
  • For Serving:
  • 8 small corn tortillas
  • 1 avocado (sliced)
  • Lime wedges (optional)

    Prepare the Jackfruit

    Drain and rinse the jackfruit. Remove any hard seeds and shred the jackfruit with your hands or a fork to create a pulled meat texture.

    Cook the Jackfruit

    Heat olive oil in a skillet over medium heat. Add diced onion and garlic, sautéing until fragrant (about 2 minutes). Add the shredded jackfruit, smoked paprika, cumin, chili powder, and cinnamon. Stir to coat evenly.

    Add vegetable broth, soy sauce, and maple syrup. Simmer for 10 minutes, stirring occasionally, until the liquid is absorbed and the jackfruit is tender.

    In a large bowl, combine shredded red and green cabbage, mango, and cilantro. Drizzle with lime juice and olive oil. Toss until well mixed. Season with salt to taste.
