Ingredients
    For the Whipped Feta Base:
  • 200 g feta cheese (block-style, not crumbled)
  • 120 g Greek yogurt (plain, full-fat for creaminess)
  • 3 tbsp olive oil (plus extra for serving)
  • 1 roasted garlic bulb (see below)
  • 1 tbsp lemon juice (freshly squeezed)
  • 1 tsp lemon zest (finely grated)
  • ¼ tsp black pepper (freshly ground)
  • Salt to taste (optional, depending on feta saltiness)
  • For Roasting the Garlic:
  • 1 whole garlic bulb
  • 1 tsp olive oil
  • 1 pinch salt
  • Optional Toppings:
  • 1 tsp chili flakes or Aleppo pepper
  • Fresh thyme or oregano leaves
  • Honey drizzle or crushed pistachios for sweetness & crunch
Instructions
    Roast the Garlic

    Preheat the oven to 200°C. Slice the top off the garlic bulb to expose the cloves. Drizzle with olive oil and sprinkle with salt. Wrap in foil and roast for 35–40 minutes until cloves are golden and soft. Let it cool for 5 minutes.

    In a food processor, combine feta, Greek yogurt, olive oil, lemon juice, zest, black pepper, and all the roasted garlic cloves. Blend on high until very smooth and creamy (1–2 minutes). Scrape down the sides halfway through blending.

    Taste and adjust for salt and acidity. If you prefer a looser consistency, add a splash of cold water or more olive oil. You can refrigerate for 20 minutes to let flavors meld, but it’s also delicious served right away.

    Spread the whipped feta into a shallow serving bowl. Use the back of a spoon to create swoops. Drizzle with olive oil, sprinkle chili flakes or herbs, and add any other toppings you like.
Note

Storage: Store in an airtight container in the refrigerator for up to 4 days. Stir before serving again.

Feta Tips: Use block feta stored in brine for the best texture and flavor. Pre-crumbled feta is often too dry.
