Ingredients
    For the Filling:

  • Salt & pepper to taste

  • Water for softening
  • Optional Dipping Sauce:
  • 3 tbsp soy sauce
  • 1 tsp rice vinegar
  • 1 tsp honey or maple syrup
  • ½ tsp chili flakes (optional)
  • 1 tsp sesame seeds

    Prepare the Filling

    In a medium bowl, combine the cooked rice noodles, julienned carrot, bell pepper, zucchini, spring onions, coriander, sesame oil, salt, and pepper. Mix gently to avoid breaking the noodles. Set aside.
