Ingredients
    For the Crispy Tofu
  • 400 g firm tofu (pressed and cut into 2–3 cm cubes)
  • 3 tbsp cornstarch (for coating)
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp vegetable oil or sunflower oil
  • For the Creamy Coconut Sauce
  • 1 cup coconut milk (full-fat recommended)
  • 1 tbsp red chili paste or chili garlic sauce
  • 1 tbsp soy sauce
  • 1 tbsp maple syrup or honey
  • 2 cloves garlic (minced)
  • 1 tsp fresh ginger (grated)
  • 0.5 tsp chili flakes (adjust to taste)
  • 1 tsp lime juice
  • 0.5 tbsp cornstarch mixed with 2 tbsp water (slurry for thickening)
  • Optional Garnishes
  • 2 tbsp green onions (thinly sliced)
  • 1 tbsp toasted sesame seeds
  • Fresh cilantro leaves
  • Lime wedges
  • For Serving
  • 2 cups steamed jasmine rice or basmati rice
  • or cooked noodles
Instructions
    Prepare the Tofu
  1. 1
Remove the tofu from its packaging and drain excess liquid. Wrap it in a clean kitchen towel and place a heavy object (like a pan) on top for about 10 minutes to press out extra moisture. Once pressed, cut the tofu into evenly sized cubes. Dry tofu helps create a crispier texture during cooking.
  2. Season and Coat the Tofu
  3. 2
Place the tofu cubes in a bowl. Sprinkle them with cornstarch, salt, and black pepper. Gently toss the tofu pieces until they are evenly coated. The cornstarch layer will help create a crispy golden crust when pan-fried.
  4. Pan-Fry the Tofu
  5. 3
Heat 2 tablespoons of vegetable oil in a large nonstick skillet over medium heat (around 175–180°C). Add the tofu cubes in a single layer. Cook them for 8–10 minutes, turning occasionally, until all sides become golden brown and crispy. Once done, transfer them to a plate and set aside.
  6. Prepare the Coconut Sauce
  7. 4
In the same pan, add a small drizzle of oil if needed. Add the minced garlic and grated ginger, and sauté for about 30–40 seconds until fragrant. Pour in the coconut milk, then stir in soy sauce, chili paste, maple syrup, and chili flakes. Let the mixture simmer gently for 3–4 minutes so the flavors blend together.
  8. Thicken the Sauce
  9. 5
Stir the cornstarch slurry and slowly pour it into the simmering sauce while stirring continuously. Cook for 1–2 minutes until the sauce thickens into a smooth, creamy consistency. Add lime juice at the end to brighten the flavor.
  10. Combine the Tofu and Sauce
  11. 6
Add the crispy tofu back into the pan with the coconut sauce. Gently toss the tofu so each piece is coated with the creamy spicy sauce. Simmer for 2–3 minutes so the tofu absorbs some of the flavors.
  12. Garnish and Serve
  13. 7
Turn off the heat and sprinkle green onions, sesame seeds, and fresh cilantro on top. Serve the spicy coconut tofu immediately over steamed rice or noodles. Add a squeeze of lime for extra freshness if desired.
Note

Press the tofu well: Removing moisture ensures the tofu becomes crispy rather than soft when fried.

Adjust the spice level: Add more chili paste for extra heat or reduce it if you prefer a milder sauce.

Use full-fat coconut milk: It creates a richer and creamier sauce.

Make it gluten-free: Use tamari or gluten-free soy sauce.

Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop.

Meal prep tip: This dish reheats well, making it excellent for meal preparation lunches.
