Ingredients
    For the Chicken Marinade
  • 800 g chicken thighs or breast (boneless, skinless)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp paprika
  • 1 tbsp garlic paste
  • 1 tbsp ginger paste
  • 2 tbsp lemon juice
  • 2 tbsp vegetable oil
  • For the Mango Habanero Sauce
  • 2 cups ripe mango (peeled and diced)
  • 1 –2 habanero peppers (seeded for less heat)
  • 3 tbsp honey
  • 2 tbsp brown sugar
  • 3 tbsp vinegar (white or apple cider)
  • 2 cloves garlic
  • 1 tbsp soy sauce
  • 0.5 tsp salt
  • 0.5 tsp chili flakes (optional)
  • 0.5 cup water
  • For Garnish
  • 2 tbsp fresh cilantro (chopped)
  • 1 tbsp sesame seeds (optional)
  • Lime wedges
Instructions
    Marinate the Chicken
  1. 1
In a large bowl, combine chicken with salt, black pepper, paprika, garlic paste, ginger paste, lemon juice, and oil. Mix thoroughly so every piece is well coated. Cover and let it marinate for at least 30 minutes (or up to 2 hours for deeper flavor).
  2. Prepare the Mango Habanero Sauce
  3. 2
Add mango, habanero peppers, garlic, honey, brown sugar, vinegar, soy sauce, salt, chili flakes, and water into a blender. Blend until smooth. Taste and adjust sweetness or heat if needed.
  4. Cook the Sauce
  5. 3
Pour the blended mixture into a saucepan and cook over medium heat. Stir occasionally and let it simmer for 10–15 minutes until it thickens slightly. The sauce should become glossy and rich.
  6. Cook the Chicken
  7. 4
Heat a grill pan or skillet over medium-high heat. Cook the marinated chicken for about 5–7 minutes on each side until fully cooked and slightly charred.
  8. 5
Alternatively, bake in a preheated oven at 200°C for 20–25 minutes.
  9. Combine Chicken with Sauce
  10. 6
Transfer the cooked chicken into the saucepan or pour the sauce over the chicken in a pan. Toss well to coat each piece evenly. Let it cook together for another 5 minutes so the flavors fully absorb.
  11. Rest and Garnish
  12. 7
Remove from heat and let the chicken rest for 5–10 minutes. Garnish with chopped cilantro, sesame seeds, and a squeeze of fresh lime juice before serving.
Note
  • Adjust Heat Level: Remove seeds from habanero or use only one pepper for a milder taste.
  • Mango Choice: Use ripe, sweet mangoes for the best flavor balance.
  • Alternative Cooking: This recipe works great on a charcoal grill for extra smoky flavor.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days.
  • Freezing: Sauce can be frozen separately for up to 2 months.
  • Serving Ideas: Serve with steamed rice, naan, or roasted vegetables.
