Ingredients
    For the Soft Scrambled Eggs:

  • 2 tbsp whole milk
  • 1 tbsp unsalted butter
  • 1/8 tsp salt (or to taste)
  • 1 pinch freshly ground black pepper
  • For the Panini Assembly:
  • 4 slices sourdough or ciabatta bread
  • 1 ripe avocado (mashed)
  • 1 tsp lemon juice
  • 4 slices cheddar or provolone cheese
  • 1 small tomato (thinly sliced)
  • 1 tbsp mayonnaise (optional)
  • 1 tbsp olive oil or melted butter (for brushing the bread)

    Prep the Avocado Spread

    Mash the avocado in a small bowl and mix with lemon juice, a pinch of salt, and black pepper. Set aside.

    Crack the eggs into a bowl, add milk, and whisk until smooth and slightly frothy. Heat a non-stick skillet over low heat and melt the butter. Pour in the eggs and stir gently with a silicone spatula, scraping the bottom continuously until the eggs are softly set and custardy. Remove from heat immediately—do not overcook.

Note

Bread Tip: Sourdough, ciabatta, or any rustic bread works best for panini. Avoid overly soft sandwich bread.

Cheese Swap: Mozzarella, Swiss, or pepper jack are great alternatives for cheddar or provolone.

Egg Texture: Cook the eggs on low heat and remove them before they look fully done—they’ll continue cooking slightly from residual heat.
