Ingredients
    For the Base:

  • 400 g fresh okra, sliced into ½-inch rounds
  • 1 can (400 g) diced tomatoes (with juice)
  • 1 cup chicken broth (or seafood stock)
  • 0.5 tsp smoked paprika
  • 0.5 tsp dried thyme
  • 0.5 tsp cayenne pepper (adjust to heat preference)
  • Salt and black pepper to taste
  • For the Shrimp:
  • 400 g large shrimp (peeled and deveined)
  • 1 tbsp lemon juice
  • 1 tsp Cajun seasoning
  • 1 tbsp olive oil
  • Optional Garnish:
  • 2 tbsp chopped parsley
  • Lemon wedges for serving

    Prepare the Vegetables

    Heat the vegetable oil in a large skillet or Dutch oven over medium heat. Add diced onions, bell peppers, and celery. Sauté for 5–7 minutes until soft and translucent. Stir in the garlic and cook for 1 more minute until fragrant.

    Add the sliced okra to the skillet and sauté for about 8–10 minutes, stirring occasionally, until the okra is slightly tender and some of the slime is cooked off.

    Pour in the diced tomatoes (with juice) and chicken broth. Stir in paprika, thyme, cayenne pepper, salt, and black pepper. Lower the heat and let it simmer uncovered for 15–20 minutes, stirring occasionally, until the mixture thickens and the okra is fully tender.

    While the base is simmering, toss the shrimp with lemon juice, Cajun seasoning, and olive oil. Set aside to marinate for 5 minutes.

Note

For less slime from the okra, you can pre-sauté it separately or lightly toss with vinegar before cooking.

Frozen okra can be used, but thaw and drain it first.
