In the same blender (rinsed), combine pineapple juice, coconut milk, and crushed ice. Blend until creamy, smooth, and slightly frothy. Taste and adjust sweetness if needed.
Assemble the Drink
3 Pour the raspberry puree into the bottom of two serving glasses. Slowly pour the coconut-pineapple mixture over the back of a spoon to create a layered effect.
Garnish and Serve
4 Top with fresh raspberries, a pineapple slice, and mint leaves if desired. Serve immediately while chilled and fresh.
Note
- For a thicker texture, use frozen raspberries instead of fresh.
- You can replace honey with maple syrup or sugar syrup.
