Slice the large dill pickles lengthwise to create sandwich halves. Pat them dry with a paper towel to remove excess moisture.
Spread mayonnaise or mustard on the inside of each pickle half.
Layer turkey or ham, cheese, shredded lettuce, tomato slices, and red onion on one half of the pickle. Place the other pickle half on top to form a sandwich.
