Ingredients
    For the Chicken:
  • 2 tbsp olive oil
  • 2 large chicken breasts (cut into bite-sized pieces)
  • 1 tsp salt
  • 0 tsp 0.5 black pepper
  • 1 tsp Italian seasoning
  • 0.5 tsp paprika
  • 3 cloves garlic, minced
  • For the Pasta & Sauce:
  • 2 cups penne pasta (or any short pasta)
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 0.5 cup sun-dried tomatoes, chopped
  • 1 tsp red pepper flakes (optional)
  • 0.5 cup grated parmesan cheese
  • 2 cups fresh spinach, chopped
  • 0.5 cup cherry tomatoes, halved (optional)
  • For Garnish:
  • 0.25 cup fresh basil, chopped
  • Extra grated parmesan (for serving)
Instructions
    Sear the Chicken
  1. 1
Heat olive oil in a large skillet or deep pan over medium heat. Add the chicken pieces and season with salt, pepper, Italian seasoning, and paprika. Sauté for 5-7 minutes until the chicken is golden brown and fully cooked. Remove from the pan and set aside.
  2. Sauté Garlic & Sun-Dried Tomatoes
  3. 2
In the same pan, add minced garlic and sun-dried tomatoes. Cook for 1 minute until fragrant, stirring frequently.
  4. Cook the Pasta
  5. 3
Pour in the chicken broth and heavy cream. Stir well, then add the penne pasta. Bring to a gentle boil, then lower the heat to a simmer. Cover and cook for 12-15 minutes, stirring occasionally, until the pasta is al dente and the liquid has slightly reduced.
  6. Add the Spinach & Cheese
  7. 4
Stir in the fresh spinach and parmesan cheese. Cook for another 2-3 minutes until the spinach wilts and the sauce thickens.
  8. Combine & Serve
  9. 5
Return the cooked chicken to the pan, mixing well. Adjust seasoning as needed. Let it sit for 5 minutes before serving.
  10. Garnish & Enjoy
  11. 6
Top with fresh basil, extra parmesan, and cherry tomatoes if using. Serve hot and enjoy!
Note
  • Substitutions: Swap heavy cream for half-and-half for a lighter version. Use rotisserie chicken for a quicker alternative.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat with a splash of milk to revive the creamy texture.
  • Variations: Add mushrooms or bell peppers for extra veggies, or swap chicken for shrimp.
