Ingredients
    For the Roasted Tomatoes:
  • 2 cups cherry tomatoes (halved)
  • 1 tbsp olive oil
  • 0.5 tsp sea salt
  • 0.25 tsp freshly ground black pepper
  • 0.5 tsp dried oregano (optional)
  • For the Garlic Butter Orzo:
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 4 cloves garlic (minced)
  • 1 small yellow onion (finely chopped)
  • 1 cup orzo pasta
  • 2.5 cups vegetable broth (warm)
  • 0.25 tsp red pepper flakes (optional)
  • 0.5 cup grated parmesan cheese (plus more for serving)
  • 2 tbsp fresh basil (chopped)
  • Salt & pepper to taste
  • 1 tbsp lemon juice (freshly squeezed)
Instructions
    Roast the Tomatoes

    Preheat the oven to 200°C. Place halved cherry tomatoes on a baking sheet. Drizzle with olive oil, sprinkle with salt, pepper, and oregano. Roast for 15–20 minutes until they are softened and slightly caramelized. Set aside.

    In a large pot or deep sauté pan, melt the butter with olive oil over medium heat. Add the minced garlic and chopped onion. Sauté for 2–3 minutes until fragrant and translucent, not browned.
  4. Toast the Orzo

    Add the orzo to the pot and toast it in the garlic butter mixture for 2–3 minutes, stirring constantly, until slightly golden.
