Ingredients
    For the Chickpea Salad:
  • 1 can (15 oz)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 0.25 cup red onion, finely chopped
  • 0.25 cup kalamata olives, pitted and sliced
  • 0.25 cup parsley, chopped
  • 2 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 0.5 tsp dried oregano
  • Salt & black pepper, to taste
  • For the Whipped Feta:
  • 0.75 cup feta cheese, crumbled
  • 0.25 cup Greek yogurt (plain, full-fat)
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • Fresh cracked black pepper, to taste
Instructions
    Make the Whipped Feta
  1. 1
In a food processor, combine crumbled feta, Greek yogurt, olive oil, lemon juice, and black pepper. Blend until smooth and creamy, scraping down the sides as needed. Transfer to a bowl, cover, and refrigerate until ready to use.
  2. Prepare the Chickpea Salad
  3. 2
In a large bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, olives, and parsley. Add olive oil, red wine vinegar, lemon zest, lemon juice, and oregano. Toss everything gently to coat well. Season with salt and pepper to taste.
  4. Rest the Salad (Optional)
  5. 3
Let the salad rest for 10 minutes to allow the flavors to meld. You can also chill it in the fridge for up to an hour for a cooler, more refreshing taste.
  6. Assemble and Serve
  7. 4
Spread a generous layer of whipped feta on a serving plate or individual bowls. Spoon the chickpea salad on top or beside the whipped feta. Drizzle with a little extra olive oil if desired. Serve with warm pita bread, crackers, or enjoy as is.
Note

Storage: Salad (without whipped feta) can be stored in an airtight container in the fridge for up to 3 days. Whipped feta stays fresh for 4–5 days refrigerated.

Add-ins: Add diced avocado, roasted red pepper, or sun-dried tomatoes for variety.

Make it vegan: Use vegan feta and dairy-free yogurt alternatives for the whipped feta.

Meal prep tip: Store salad and whipped feta separately and assemble right before eating for best texture.
