Description

Marry Me Melting Cabbage is a rich, creamy, oven-roasted cabbage dish infused with garlic, herbs, parmesan, and a silky cream sauce that slowly caramelizes as it bakes. The cabbage becomes tender, buttery, and slightly crisp on the edges, making it an irresistible vegetarian dinner or side dish that tastes far more luxurious than its simple ingredients suggest.

Ingredients
    For the Roasted Cabbage
  • 1 large green cabbage (cut into thick wedges, core intact to hold shape)
  • 3 tbsp olive oil
  • 1 tsp salt (adjust to taste)
  • 0.5 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 0.5 tsp chili flakes (optional)
  • For the Creamy “Marry Me” Sauce
  • 4 cloves garlic (minced)
  • 1 cup heavy cream
  • 0.5 cup freshly grated parmesan cheese
  • 0.5 cup vegetable broth
  • 1 tbsp butter
  • 1 tsp Italian seasoning
  • 0.5 tsp onion powder
  • 0.5 tsp salt (or to taste)
  • For Garnish
  • 2 tbsp chopped fresh parsley
  • 0.25 cup extra grated parmesan
Instructions
    Prepare the Cabbage
  1. 1
Cut the cabbage into 1.5–2 inch thick wedges, keeping the core attached so they stay intact while roasting. Pat them dry with paper towels. This helps achieve better caramelization in the oven.
  2. 2
Brush both sides generously with olive oil. Sprinkle evenly with salt, black pepper, paprika, thyme, and chili flakes.
  3. Step 2: First Roast
  4. 3
    Preheat your oven to 200°C.
  5. 4
Arrange the cabbage wedges on a parchment-lined baking tray in a single layer. Make sure they are not overlapping. Roast for 20 minutes until the bottom starts to caramelize and turn golden brown.
  6. 5
Carefully flip each wedge and return to the oven for another 10 minutes.
  7. Step 3: Prepare the Creamy Sauce
  8. 6
While the cabbage is roasting, melt butter in a saucepan over medium heat.
  9. 7
Add minced garlic and sauté for 1 minute until fragrant but not browned.
  10. 8
Pour in the vegetable broth and let it simmer for 2–3 minutes. Then add heavy cream, Italian seasoning, onion powder, and salt. Stir gently and simmer for 3–4 minutes until slightly thickened.
  11. 9
Add parmesan cheese and stir until fully melted and smooth. The sauce should be creamy but pourable.
  12. Step 4: Add Sauce & Final Bake
  13. 10
Remove the cabbage from the oven. Spoon the creamy sauce generously over each wedge.
  14. 11
    Sprinkle extra parmesan on top.
  15. 12
Return to the oven and bake for another 10 minutes, or until the sauce is bubbling and slightly golden around the edges.
  16. Step 5: Rest & Garnish
  17. 13
Remove from oven and let rest for 5 minutes. This allows the sauce to settle and thicken slightly.
  18. 14
Sprinkle fresh parsley on top before serving.
  19. 15
    Serve warm.
Note
  • For extra flavor, add a squeeze of lemon juice before serving.
  • You can replace heavy cream with cooking cream for a lighter version.
  • For a protein boost, add roasted chickpeas on top.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat in the oven at 180°C for 10 minutes to maintain texture.
  • Avoid microwaving if possible, as it may soften the crispy edges.
