Ingredients
    For the Pastry
  • 1 sheet puff pastry (thawed)
  • 1 tbsp granulated sugar
  • 1 tbsp water (for sealing edges)
  • For the Mango Cream Filling
  • 1 cup ripe mango puree (fresh blended)
  • 0.5 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • For the Topping
  • 0.5 cup fresh mango slices (thinly sliced)
  • 1 tbsp honey (optional, for shine)
  • 1 tbsp powdered sugar (optional, for dusting)

    Prepare the Puff Pastry Sheets

    Cut the thawed puff pastry sheet into 6 equal rectangles. Leave them on a parchment-lined tray and brush the edges lightly with water. Sprinkle a small pinch of sugar over each piece for extra crispness.

    Preheat your oven to 200°C. Place the pastry rectangles in the center rack and bake for 18–22 minutes, or until golden, flaky, and puffed. Remove and let them cool completely.

    In a mixing bowl, whip the heavy cream and powdered sugar until soft peaks form. Add the mango puree and vanilla extract. Fold gently until smooth, creamy, and thick. Chill for at least 20 minutes.

    Once the baked pastry pieces are cool, gently slice them in half horizontally. Spoon or pipe a generous amount of mango cream onto the bottom half.

    Place a few thin slices of fresh mango on top of the cream. Drizzle a little honey if you prefer extra shine and sweetness.

Note

Keep the mango cream chilled until assembling to maintain its texture.

Use fresh, sweet mangoes such as Alfonso, Honey, or Ataulfo for the best flavor.

You may add a squeeze of lemon to brighten the taste if the mangoes are overly sweet.

Store assembled pastries in the refrigerator for 24 hours. For best crispness, fill just before serving.

The cream can also be piped into small tart shells if you prefer mini desserts.
