    For the Pasta:

  • 1 tsp salt (for boiling water)
  • For the Cheese Sauce:
  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 3 cups whole milk (warm)
  • 1 cup heavy cream
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp mustard powder
  • 1/4 tsp smoked paprika
  • 2 1/2 cups sharp cheddar cheese (grated)
  • 1 cup gruyere cheese (grated)
  • 1/2 cup parmesan cheese (grated)
  • For the Topping (Optional):
  • 1 cup panko breadcrumbs
  • 2 tbsp unsalted butter (melted)
  • 1/4 tsp smoked paprika
Instructions
    Cook the Pasta

    Bring a large pot of salted water to a boil. Cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.

    In a large saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 1 minute until a smooth paste forms (this is called a roux). Slowly add the warm milk and heavy cream, whisking constantly to prevent lumps. Continue stirring until the sauce thickens (about 5 minutes).
