Ingredients
    For the Chicken:
  • 1 lbs 1.5 boneless, skinless chicken thighs (cut into bite-sized pieces)
  • 1 tbsp cornstarch
  • 1 tbsp vegetable oil
  • For the Sauce:
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup honey
  • 2 tbsp ketchup
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 2 cloves garlic (minced)
  • 1 tsp fresh ginger (minced)
  • 1/4 tsp red pepper flakes (optional for spice)
  • 1/2 cup water
  • 1 tbsp 1 cornstarch + 2 tbsp water (slurry for thickening)
  • For Garnishing:
  • 2 tbsp sesame seeds
  • 2 green onions, sliced

    Prep the ChickenCut the chicken thighs into bite-sized pieces and toss with 1 tbsp cornstarch to coat evenly. This helps the sauce cling better to the chicken.

    Sauté the ChickenSet the Instant Pot to Sauté mode and add 1 tbsp vegetable oil. Once hot, add the chicken pieces and sear for 2-3 minutes until lightly browned. Don’t cook fully; just brown the edges.

    In a bowl, whisk together soy sauce, honey, ketchup, rice vinegar, sesame oil, minced garlic, ginger, red pepper flakes (if using), and water. Pour the sauce over the chicken in the Instant Pot.
