Ingredients
    For the Strawberry Base

  • 2 tbsp sugar or honey (adjust to taste)
  • 2 tbsp lemon juice (freshly squeezed)

  • For the Matcha Layer
  • 1.5 tsp ceremonial-grade matcha powder
  • 0.25 cup warm water (not boiling, around 75–80°C)
  • 1–2 tsp honey or simple syrup (optional)
  • For Assembly
  • 1 cup ice cubes
  • 0.75–1 cup cold water or sparkling water
  • Fresh strawberry slices (optional, for garnish)
  • Mint leaves (optional)

    Prepare the Strawberry Purée

    Add the chopped strawberries, sugar or honey, lemon juice, and cold water into a blender. Blend until completely smooth. Taste the purée and adjust sweetness if needed. Set aside.

    In a small bowl, sift the matcha powder to remove lumps. Pour warm (not hot) water over it. Use a bamboo whisk or a small electric frother to vigorously whisk until the matcha becomes smooth, frothy, and evenly dissolved. Sweeten lightly if desired.

    Fill your serving glasses with ice cubes. Pour 3–4 tablespoons of strawberry purée at the bottom of each glass. Add cold water or sparkling water over the purée, leaving space for the matcha layer.
