Heat the Milk
4 Pour in the milk and gently heat the mixture over low heat until it reaches about 65–70°C. Do not boil the milk. Stir continuously to prevent scorching and ensure a smooth texture.
Strain and Serve
5 Strain the latte through a fine mesh sieve into mugs to remove whole spices and ginger slices. Serve hot, topped with whipped cream and a light dusting of cinnamon if desired.
Note
- For a vegan version, use oat milk or almond milk.
- Adjust sweetness by increasing or reducing brown sugar.
- For a stronger gingerbread flavor, add a pinch of ground cloves.
- Store leftover chai (without milk) in the refrigerator for up to 2 days and reheat with fresh milk before serving.
