Ingredients
    For the Chicken Filling
  • 2 tbsp olive oil
  • 500 g boneless chicken (finely chopped or ground)
  • 4 cloves garlic (minced)
  • 1 tbsp ginger (finely chopped)
  • 1 small onion (finely chopped)
  • 1 medium carrot (finely diced)
  • 1/2 cup capsicum (finely chopped)
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce (or substitute with soy sauce)
  • 1 tbsp chili sauce (optional)
  • 1 tsp black pepper
  • 1/2 tsp salt (adjust to taste)
  • 1 tsp sesame oil
  • For the Lettuce Wraps
  • 12 –16 large lettuce leaves (washed and dried, preferably iceberg or butter lettuce)
  • For Garnishing
  • 2 tbsp spring onions (chopped)
  • 1 tbsp sesame seeds (optional)
  • 1 tbsp fresh coriander (chopped)
Instructions
    Prepare the Ingredients
  1. 1
Wash and dry the lettuce leaves carefully to keep them crisp. Finely chop all vegetables and mince the garlic and ginger. If using chicken breast, chop it into very small pieces or grind it for a smoother texture.
  2. Cook the Chicken
  3. 2
Heat olive oil in a large pan over medium heat. Add the chopped onion and sauté for 2–3 minutes until soft and slightly golden. Then add minced garlic and ginger, cooking for another 1 minute until fragrant.
  4. Add Chicken and Vegetables
  5. 3
Add the chicken to the pan and cook for 5–7 minutes, breaking it apart as it cooks. Once the chicken turns white and starts browning slightly, add carrots and capsicum. Stir well and cook for another 3–4 minutes.
  6. Season the Filling
  7. 4
Pour in soy sauce, oyster sauce, and chili sauce (if using). Add black pepper and salt. Stir everything together and cook for another 2–3 minutes until the mixture is well combined and slightly glossy. Finish with a drizzle of sesame oil.
  8. Rest and Assemble
  9. 5
Turn off the heat and let the filling rest for 5 minutes. Spoon the warm chicken mixture into each lettuce leaf, like a small cup.
  10. Garnish and Serve
  11. 6
Top with chopped spring onions, sesame seeds, and fresh coriander. Serve immediately while fresh and crisp.
Note

Use iceberg lettuce for extra crunch and structure.

You can substitute chicken with minced beef or tofu for variation.

For extra flavor, add a splash of fresh lime juice before serving.

Store leftover filling in an airtight container in the fridge for up to 3 days.

Avoid overcooking the chicken to keep it juicy and tender.
