  • 1 tsp Salt
  • 0.5 tsp Black pepper (freshly ground)
  • 1 tbsp Olive oil (for searing)
  • 2 tbsp Unsalted butter
  • 4 cloves Garlic (minced)
  • 1 tsp Fresh thyme (optional, finely chopped)
  • 1 tsp Fresh parsley (for garnish, chopped)
  • For the Potatoes
  • 500 g Baby potatoes (halved or quartered)
  • 1 tbsp Olive oil
  • 1 tsp Paprika
  • 0.5 tsp Garlic powder
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

    Prepare the Ingredients

    Wash and halve the baby potatoes. Pat dry the steak cubes with a paper towel to ensure a good sear. Bring steak to room temperature (about 15–20 minutes) before cooking.

    Heat 1 tbsp olive oil in a large skillet over medium heat. Add the baby potatoes in a single layer. Sprinkle with paprika, garlic powder, salt, and black pepper. Cook for about 12–15 minutes, stirring occasionally, until golden and fork-tender. Remove from skillet and set aside.

    In the same skillet, increase heat to medium-high. Add 1 tbsp olive oil and the steak bites in batches (don’t overcrowd). Sear each side for about 2 minutes until browned. Season with salt and pepper as they cook. Remove and rest on a plate.

    Lower heat to medium. Add 2 tbsp butter and minced garlic to the skillet. Sauté for 30 seconds until fragrant. Return the steak bites and cooked potatoes to the pan. Toss everything in the garlic butter sauce for 1–2 minutes.
