Ingredients

  • 1 tbsp Olive Oil
  • 1 small Onion (finely chopped)
  • 2 cloves Garlic (minced)
  • 1 (14.5 oz) can Diced Tomatoes ((with juice))
  • 1 (8 oz) can Tomato Sauce
  • 1 (15 oz) can Black Beans ((drained and rinsed))
  • 1 cup Corn Kernels (fresh, frozen, or canned)
  • 1 tbsp Taco Seasoning (store-bought or homemade)
  • ½ tsp Salt (adjust to taste)
  • ¼ tsp Black Pepper
  • ½ cup Water
  • For the Toppings:
  • 1 cup Cheddar Cheese (shredded)
  • ½ cup Monterey Jack Cheese (shredded)
  • ½ cup Sour Cream
  • ¼ cup Green Onions (chopped)
  • ¼ cup Cilantro (chopped)
  • 1 Jalapeño (sliced, optional)
Instructions
    Sauté the Aromatics
