  • 1 egg (lightly beaten)
  • 2 tbsp buttermilk (to add to egg for extra crunch)

  • 4 cup vegetable oil (for deep frying)

  • 4 pcs brioche burger buns (toasted)
  • 4 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • 4 pcs lettuce leaves (crispy and fresh)
  • 4 slices tomato

    Marinate the Chicken

    In a bowl, combine buttermilk, garlic powder, paprika, salt, and black pepper. Add chicken thighs and make sure they are well coated. Cover and refrigerate for at least 30 minutes or overnight for deeper flavor and tenderness.

    In a large shallow dish, mix flour, cornstarch, smoked paprika, garlic powder, onion powder, salt, and cayenne. In a separate bowl, whisk the egg and buttermilk together to make an egg wash.

    Remove chicken from the marinade. Dip each piece into the flour mixture, then the egg wash, and back into the flour. Press the coating firmly to ensure it sticks well. This double dredge gives you that extra crispy crust.
