In the same skillet, melt butter and add minced garlic. Sauté for 1 minute until fragrant. Stir in sun-dried tomatoes and cook for another minute. Pour in chicken broth, heavy cream, and parmesan cheese. Stir well to combine. Add Italian seasoning and red pepper flakes (if using). Let it simmer for 3-4 minutes. If a thicker sauce is desired, mix cornstarch with water and stir into the sauce.

3 Return the seared chicken to the skillet, spoon sauce over the top, and let it simmer for 10 minutes until the chicken is cooked through. Stir in fresh spinach and cook for another 2 minutes until wilted.
