Spicy, savory, and satisfying, Creamy Gochujang Noodles with Soft-Boiled Egg is a quick and flavorful Korean-inspired dish made with chewy noodles tossed in a rich gochujang cream sauce. Finished with a jammy soft-boiled egg and fresh toppings, it's perfect for weeknight dinners or when you're craving comfort with a kick.

Ingredients
    For the Sauce:
  • 2 tbsp gochujang (Korean red chili paste)
  • 2 tbsp cream cheese (softened)
  • 2 tbsp heavy cream
  • 1 tbsp soy sauce (low sodium)
  • 1 tsp sesame oil
  • 1 tbsp honey
  • 1 clove garlic (minced)
  • 1 tsp rice vinegar
  • For the Noodles:
  • 180 g wheat noodles or ramen noodles (uncooked)
  • Water (for boiling)
  • Salt (for boiling water)
  • For the Toppings:
  • 2 large eggs
  • 1 tbsp green onions (thinly sliced)
  • 1 tsp toasted sesame seeds
  • 1 tsp chili flakes or gochugaru (optional)
  • 1 tbsp crushed roasted seaweed (optional)
Instructions
    Prepare the Soft-Boiled Eggs
  1. 1
Bring a pot of water to a gentle boil (100°C). Lower the eggs into the water gently and boil for 6.5 minutes for a soft, jammy yolk. Immediately transfer the eggs to an ice bath for 3-4 minutes. Once cooled, peel and set aside.
  2. Cook the Noodles
  3. 2
In a separate pot, bring salted water to a boil. Add the noodles and cook according to package instructions until chewy (al dente). Drain and set aside. Drizzle a few drops of sesame oil to prevent sticking.
  4. Make the Creamy Gochujang Sauce
  5. 3
In a bowl, whisk together gochujang, softened cream cheese, heavy cream, soy sauce, sesame oil, honey, garlic, and rice vinegar until smooth and creamy.
  6. Toss the Noodles in the Sauce
  7. 4
In a pan over low heat, pour the creamy gochujang sauce and warm it slightly for 1-2 minutes. Add the cooked noodles and toss to coat evenly in the warm sauce. Cook for another 1-2 minutes until the noodles absorb some sauce.
  8. Assemble and Garnish
  9. 5
Divide the noodles into serving bowls. Slice the soft-boiled eggs in half and place on top. Sprinkle with green onions, sesame seeds, and optional chili flakes and roasted seaweed for extra flavor and crunch.
Note
