  • 1 small onion (finely chopped)
  • 1 cup heavy cream
  • 0.5 cup reserved pasta water
  • 0.5 tsp black pepper
  • 0.5 tsp chili flakes (optional)
  • Salt to taste

  • 2 balls burrata cheese
  • 0.25 cup grated parmesan cheese
  • Fresh basil leaves (a handful)
  • 1 tbsp olive oil (for drizzling)
Instructions
    Roast the Garlic

    Preheat your oven to 180°C. Slice the top off the garlic bulb to expose the cloves. Drizzle with olive oil and sprinkle with salt. Wrap it in foil and roast for 30–35 minutes until the cloves are soft and golden. Once done, let it cool slightly, then squeeze out the roasted garlic into a small bowl and mash into a paste.

    Bring a large pot of water to a boil. Add salt and cook the pasta according to package instructions until al dente. Before draining, reserve about ½ cup of pasta water. Drain the pasta and set aside.

    Heat olive oil in a large pan over medium heat. Add chopped onions and sauté until soft and translucent (about 3–4 minutes). Add the roasted garlic paste and cook for another minute to release its aroma.
