In a small saucepan, combine fresh cranberries, water, and honey. Bring to a simmer over medium heat and cook for about 5 minutes, or until cranberries soften and burst. Mash the cranberries with a spoon and stir in the vanilla extract. Strain the syrup through a fine mesh sieve to remove solids. Let it cool.
Assemble the Drink
2 Fill two glasses with ice cubes. Pour fresh orange juice into each glass, filling them about 3/4 of the way. Slowly pour the cranberry syrup over the back of a spoon into the glasses, allowing it to settle at the bottom for a sunrise effect. Gently top with sparkling water.
Garnish and Serve
3 Garnish with an orange slice, a few fresh cranberries, and mint leaves. Serve immediately and enjoy!
