Ingredients
    For the Coconut Base
  • 2 cups full-fat coconut milk (canned, well shaken)
  • 3 tbsp maple syrup (or to taste)
  • 1 tsp vanilla extract
  • Pinch of salt
  • For the Mango Swirl
  • 1.5 cups ripe mango (peeled and chopped)
  • 1 tbsp lime juice (freshly squeezed)
  • 1 tbsp maple syrup (optional, depending on mango sweetness)

    Prepare the Mango Swirl

    Add the chopped mango, lime juice, and maple syrup to a blender or food processor. Blend until completely smooth. If needed, add 1–2 tsp of water for a smoother consistency. Set aside.

    In a medium mixing bowl, whisk together the full-fat coconut milk, maple syrup, vanilla extract, and a pinch of salt until smooth and combined.
  4. Layer into Popsicle Molds

    Spoon 1–2 tablespoons of the coconut mixture into each popsicle mold. Add a spoonful of mango puree, then alternate the layers, leaving a little room at the top. Use a skewer or toothpick to gently swirl the mango through the coconut mixture for a marbled effect.

    Tap the molds gently on the counter to remove air bubbles. Insert the popsicle sticks. Freeze for at least 6 hours or until completely solid.

    To release the popsicles, run warm water over the outside of the mold for 10–15 seconds. Gently pull the popsicles out and enjoy immediately.
Note

Sweetness adjustment: Taste your mango puree and coconut base before assembling. Adjust the sweetness based on your preference or fruit ripeness.

Vegan version: This recipe is naturally vegan.

Storage: Keep in an airtight container or leave them in the molds, covered with plastic wrap, for up to 2 weeks.

Variations:

  • Use pineapple or passionfruit puree for the swirl instead of mango.
