Gently wash the strawberries and pat them completely dry with a paper towel. Any moisture will prevent the chocolate from adhering properly.

Place the chopped chocolate and coconut oil in a heatproof bowl.
Melt the chocolate using a double boiler method: Set the bowl over a pot of simmering water (make sure the bowl doesn’t touch the water) and stir continuously until smooth.
Hold each strawberry by the stem and dip it into the melted chocolate, swirling gently for even coverage.
Let excess chocolate drip off before placing it on a parchment-lined tray.
