Perfect for a healthy lunch or a light dinner, this panini is packed with protein and fresh flavors. Serve with a side salad or soup for a complete meal!

Ingredients
    For the Sandwich Base:
  • 2 slices Ciabatta bread (or sourdough, whole wheat)
  • 1 tbsp butter (for grilling, softened)
  • 1 tbsp mayonnaise (optional, for spread)
  • For the Filling:
  • 1 chicken breast, grilled and sliced
  • 1 avocado, mashed
  • 2 slices cheese (cheddar, mozzarella, or Swiss)
  • 2 slices tomato
  • 1/4 cup baby spinach or arugula
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp lemon juice (to prevent avocado from browning)
Instructions
    Prepare the Chicken
  1. 1
Season the chicken breast with salt, black pepper, and garlic powder. Grill on medium-high heat for 6-7 minutes per side until fully cooked. Let rest for 2 minutes before slicing.
  2. Mash the Avocado
  3. 2
In a bowl, mash the avocado with a fork. Mix in a pinch of salt, black pepper, and lemon juice.
  4. Assemble the Panini
  5. 3
Spread butter on one side of each bread slice. On the unbuttered side, spread mayonnaise (if using) and layer cheese, sliced grilled chicken, mashed avocado, tomato slices, and spinach. Top with the second slice of bread, buttered side facing out.
  6. Grill the Panini
  7. 4
Preheat a panini press or a skillet over medium-high heat. Place the sandwich in the press or pan and cook for 3-4 minutes per side, pressing down with a spatula if using a skillet. Cook until the bread is crispy and golden brown, and the cheese has melted.
  8. Serve & Enjoy
  9. 5
Let the panini rest for 1-2 minutes before slicing in half. Serve hot with a side of soup, salad, or chips!
Note
  • Bread Choice: Ciabatta and sourdough work best, but whole wheat is a great healthy alternative.
  • Avocado Storage Tip: If saving for later, press plastic wrap directly onto the mashed avocado to prevent browning.
  • Cheese Variations: Use pepper jack for a spicy kick or Swiss for a mild, nutty flavor.
  • Make it Spicy: Add red pepper flakes or a drizzle of hot sauce.
