Ingredients
    For the Sago Pearls
  • 1 cup small sago pearls
  • 5 cups water (for boiling)
  • 2 cups cold water (for rinsing)
  • For the Cherry–Mango Cream Base
  • 1 cup ripe mango flesh (cubed)
  • 1 cup fresh cherries (pitted)
  • 1 cup coconut milk
  • 0.5 cup evaporated milk
  • 0.25 cup condensed milk (adjust to taste)
  • 0.25 tsp salt
  • For the Fruit Mix
  • 0.75 cup fresh cherries (pitted and halved)
  • 0.75 cup mango cubes
  • 0.5 cup chilled coconut milk or ice cubes (optional for lighter texture)
  • Optional Garnish
  • 2 tbsp toasted coconut flakes
  • 2 tbsp cherry slices
  • 4 mint leaves
Instructions
    Cook the Sago Pearls

    Bring 5 cups of water to a rolling boil in a medium pot over medium-high heat. Add the sago pearls and stir immediately to prevent sticking.

    Cook the pearls for about 10–12 minutes while stirring occasionally. The pearls will begin to turn translucent with small white centers remaining.

    Turn off the heat and cover the pot with a lid. Let the sago sit in the hot water for another 5 minutes until the pearls become fully translucent.

    Pour the cooked sago into a fine mesh strainer and rinse thoroughly with cold water. This removes excess starch and keeps the pearls separate.

    Add mango cubes and fresh cherries to a blender. Pour in coconut milk, evaporated milk, condensed milk, and salt.
