Ingredients
    For the Base:
  • 1 medium cauliflower head (cut into thick slices)
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • For the Spinach Mixture:
  • 2 cups fresh spinach (chopped)
  • 1/2 cup feta cheese (crumbled)
  • 1/4 cup cream cheese (softened)
  • 1 clove garlic (minced)
  • 1 tbsp lemon juice
  • 1/2 tsp dried oregano
  • 1/4 tsp nutmeg
  • 1 tbsp olive oil
  • For the Topping:
  • 1/2 cup mozzarella cheese (shredded)
  • 1/4 cup parmesan cheese (grated)
Instructions
    Prepare the Cauliflower Base

    Preheat oven to 200°C (392°F). Slice the cauliflower into 1/2-inch thick pieces. Drizzle with olive oil, season with salt and black pepper. Arrange on a baking sheet and roast for 20 minutes, flipping halfway through.

    Heat olive oil in a pan over medium heat. Sauté garlic for 30 seconds, then add spinach and cook until wilted (2-3 minutes). Remove from heat and mix in feta cheese, cream cheese, lemon juice, oregano, and nutmeg.
