Heat olive oil in a pan over medium heat. Sauté garlic for 30 seconds, then add spinach and cook until wilted (2-3 minutes). Remove from heat and mix in feta cheese, cream cheese, lemon juice, oregano, and nutmeg.

3 Spread the spinach mixture evenly over the roasted cauliflower slices. Sprinkle mozzarella and parmesan cheese on top. Return to the oven and bake for another 10 minutes until the cheese is melted and bubbly.

4 Let it rest for 5 minutes before serving. Garnish with extra feta and a squeeze of lemon juice if desired.
