Ingredients
    For the Salmon
  • 4 pieces salmon fillets (skin-on or skinless, boneless) (about 150–180 g each)
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp lemon juice (freshly squeezed)
  • For the Brown Sugar Soy Glaze
  • 3 tbsp light soy sauce (halal-certified)
  • 2 tbsp brown sugar (packed)
  • 1 tbsp honey
  • 1 tbsp fresh lemon juice
  • 3 cloves garlic (minced)
  • 1 tsp fresh ginger (grated)
  • 0.5 tsp chili flakes (optional)
  • 1 tsp cornstarch
  • 2 tbsp water
  • For Garnish (Optional)
  • 1 tbsp sesame seeds
  • 1 tbsp fresh parsley or spring onions (finely chopped)
  • Lemon wedges for serving
Instructions
    Prepare the Salmon
  1. 1
Pat the salmon fillets dry with paper towels. This step is essential to achieve a nice caramelized surface. Season both sides with salt and black pepper. Drizzle with lemon juice and let the fillets sit at room temperature for about 10 minutes while you prepare the glaze.
  2. Make the Brown Sugar Soy Glaze
  3. 2
In a small bowl, combine soy sauce, brown sugar, honey, lemon juice, minced garlic, grated ginger, and chili flakes. Stir until the sugar begins to dissolve.
  4. 3
In a separate small bowl, mix cornstarch with water to create a slurry. Add this slurry to the glaze mixture and stir well. This will help thicken the sauce during cooking.
  5. Sear the Salmon
  6. 4
Heat olive oil in a large oven-safe skillet over medium-high heat. Once hot, place the salmon fillets skin-side down (if using skin-on). Cook for 3–4 minutes without moving them. This allows a golden crust to form.
  7. 5
Carefully flip the fillets and cook for another 2 minutes on the other side.
  8. Add the Glaze
  9. 6
Lower the heat to medium. Pour the prepared glaze into the skillet around the salmon. Let it simmer gently for 2–3 minutes. Spoon the sauce over the salmon repeatedly to coat it evenly.
  10. 7
As the sauce heats, it will thicken and turn glossy. Avoid overcooking at this stage to prevent burning the sugar.
  11. Bake to Finish
  12. 8
Transfer the skillet to a preheated oven at 200°C. Bake for 5–7 minutes, depending on the thickness of the fillets.
  13. 9
The salmon is done when it flakes easily with a fork and reaches an internal temperature of approximately 63°C.
  14. Rest and Garnish
  15. 10
Remove the salmon from the oven and let it rest for 5 minutes. This helps retain moisture. Spoon extra glaze over the top. Garnish with sesame seeds and chopped parsley or spring onions. Serve immediately with lemon wedges.
Note

Do not overcook salmon. It becomes dry quickly. Slightly translucent in the center is perfect.

If you prefer a stronger caramelized flavor, broil for 1–2 minutes at the end.

For a gluten-free version, use gluten-free soy sauce.

This recipe pairs well with steamed rice, mashed potatoes, quinoa, or roasted vegetables.

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheat gently in a pan over low heat to avoid drying out.

You can also cook this recipe entirely on the stovetop if you do not want to use the oven.
