  • 1 tbsp fresh parsley (finely chopped, for serving)
  • For the Whipped Feta
  • 200 g feta cheese (crumbled)
  • 0.5 cup Greek yogurt (plain, unsweetened)
  • 1 tbsp olive oil
  • 1 tbsp lemon juice (freshly squeezed)
  • 1 small garlic clove (minced)
  • 0.25 tsp black pepper
  • 1 tbsp honey (optional—but recommended for balance)
Instructions
    Boil the Potatoes

    Place the baby potatoes in a pot of salted water. Bring to a boil and cook for 12–15 minutes, or until the potatoes are fork-tender. Drain and let them cool for 5 minutes.

    Transfer the cooled potatoes to a flat surface or baking sheet. Use the bottom of a glass or a potato masher to gently press each potato until it's flattened but still intact.

    Drizzle the smashed potatoes with olive oil. Sprinkle garlic powder, onion powder, smoked paprika, black pepper, and salt evenly over the top. Turn them gently to coat both sides.
