But it is magnificent in it’s own right.

A fast-food type shawarma place opened up the street from me probably in the summer. We tried it one night when we were desperate not to put any effort into feeding ourselves.

And it was good.

But…not amazing, or great. The chicken was dry, the toppings were the least creative things ever, like iceburg lettuce. I have much disdain for that as a ‘healthy’ thing. I guess it’s healthy in the way that it is not fat.

Anyway! I was sure that I could make a shawarma wrap that is even better at home.

The first time I tried was a success, but my garlic sauce tasted way more like this recipe, so I put things on hold for awhile before we tried again.

And Thursday night was the night my friends! I made a quick pickled radish, a lemon garlic aioli sauce, and that was it. For me, it was perfect.

You can get as creative as you like with these little beauties. Toppings are super flexible, you can use a simple rotisserie chicken, and any kind of hummus your heart desires.

We used roasted red pepper and it was so so good. To be honest I probably ate way too much.

Serves: 6
  • 1 rotisserie chicken (or roasted if you have the time)
  • tomato
  • chopped spinach
  • thinly sliced olives
  • hot peppers
  • hummus of your choice
  • 1 package of pita
  • Quick Pickled Radish
  • 1/4 cup red wine vinegar
  • 1/4 cup water
  • 1/2 tablespoon sugar
  • 1/2 teaspoon salt
  • 5 radishes, thinly sliced
  • Lemon Garlic Aioli
  • 1/2 cup of mayo
  • 1 teaspoon grated lemon rind
  • 1 tablespoon lemon juice
  • 1 teaspoon dijon
  • 1 clove garlic, minced
  • pinch of salt and pepper
  1. Wrap Pitas in foil and warm in the oven.
  2. When ready top them with chicken, tomato, chopped spinach, olives, pickled radish, sauce and hummus. Or whatever you like!
  3. Serve warm.
